26. Almond pastries

500 g almond flour, 750 g sugar, 4 egg whites, honey to taste, candied cherries (or almonds)

Sift the almond flour, the sugar, the egg whites and the honey into the bowl of a food processor and process until the dough begins to come together. Turn out and knead until smooth. Use a pastry syringe to make pastry locks which you will place on a greased baking sheet. Top each biscuit with a candied cherry (or almonds). Heat the oven to 180-200oC and bake the almond pastries until golden brown.
